HOW TO COOK GRASS-FED BEEF

Grass fed beef is leaner than grain-finished beef and has a different (better!) flavor, since the cows have been raised only on grass.If you’re used to store-bought, grain-finished meat, you’ll have to adjust the way you cook.Here are some of our tips for cooking your Hope Farm School beef:

ADD FAT!

Since grass-fed beef has less fat in it, you will need to add a healthy fat. We suggest using olive oil or organic butter.

DRY RUB

Instead of soaking in a marinade overnight, use a dry rub, this will help tighten the surface and keep the meat juicy. Just before grilling, you can use a marinade injector to add extra liquid into the meat.

TRY A “REVERSE SEAR”

Instead of starting with high heat and finishing on low, try starting out the steak at a lower flame to get it almost to the desired temperature, and finish by searing it HOT.

REST YOUR MEAT!

Don’t forget this important step. Let your meat rest for at least 15 minutes after cooking so the juices have time to settle into the meat and don’t run out when it is cut.
